Creamy Chicken & Rice Skillet

Cozy, comforting, and secretly nutritious

This is the kind of dinner that feels like a hug in a bowl. Creamy, warm, familiar flavors — and best of all, it’s made in one pan for minimal cleanup.


Ingredients

  • 1 lb chicken breast, diced

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup uncooked white rice

  • 2 ½ cups chicken broth

  • 1 cup broccoli florets

  • ½ cup Greek yogurt or cream cheese

  • ½ cup shredded cheddar cheese

  • Salt and pepper to taste


How to Make It

  1. Heat olive oil in a large skillet and cook chicken until browned.

  2. Add garlic and stir for 30 seconds.

  3. Stir in rice and chicken broth. Bring to a simmer.

  4. Cover and cook 15–18 minutes until rice is tender.

  5. Stir in broccoli and cook another 3–5 minutes.

  6. Remove from heat and stir in Greek yogurt and cheese until creamy.

  7. Season to taste and serve warm.
