10 Easy Crockpot Dinners for Busy Fall Nights
Cozy, family-friendly slow cooker meals for the nights when you want dinner waiting for you—not another thing on your to-do list.

The Dinner Shortcut I Come Back to Every Fall
There is a very specific point in the afternoon when our house seems to go from completely manageable to absolute chaos.
The kids are getting hungry.
I'm trying to finish whatever I didn't get done earlier.
We're coming home from an activity or walk.
Someone needs a snack even though dinner is technically coming.
And suddenly I'm supposed to figure out what we're eating.
This is exactly why I love my crockpot.
Fall is already the season when I naturally want slower, warmer meals. I want soups, shredded chicken, pot roast and dinners that make the entire house smell cozy.
But what I love most about slow cooker dinners isn't necessarily the food.
It's the fact that 5:00 PM me doesn't have to make dinner because 9:00 AM me already did.
And with little kids, that feels like a gift.
These are ten easy crockpot dinners I'm keeping in our rotation this fall. They're cozy enough to feel seasonal but simple enough for an actual weekday.
Nothing overly complicated.
Nothing requiring fifteen steps before it goes into the slow cooker.
Just really good family dinners that make fall evenings a little easier.

1. Creamy Chicken & Potatoes

This is exactly what I picture when I think of an easy fall dinner.
Chicken, baby potatoes, carrots and a creamy herb sauce all cook together, so you really don't need to do much else.
You'll Need
1½–2 pounds boneless skinless chicken breasts or thighs
1 pound baby potatoes
3 large carrots, chopped
3 garlic cloves, minced
1½ cups chicken broth
1 teaspoon dried thyme
1 teaspoon Italian seasoning
½ teaspoon garlic powder
Salt and pepper
4 ounces cream cheese
½ cup heavy cream or half-and-half
How to Make It
Add the potatoes and carrots to the bottom of your slow cooker.
Place the chicken on top and season everything.
Pour in the chicken broth.
Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken reaches 165°F.
During the final 30 minutes, stir in the cream cheese and cream.
Serve it straight from the crockpot with warm bread.
That's it.
2. Classic Beef Pot Roast

I feel like every family needs a pot roast recipe.
It feels like Sunday dinner without requiring you to spend Sunday standing over the stove.
You'll Need
3–4 pound chuck roast
1 pound baby potatoes
4 carrots, chopped
1 onion, quartered
3 garlic cloves
3 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon rosemary
1 teaspoon thyme
Salt and pepper
How to Make It
Season the roast generously.
If you have time, sear it for a few minutes on each side first. If you don't, skip it.
Add the vegetables to the slow cooker and place the roast on top.
Whisk the broth, Worcestershire and tomato paste together and pour over everything.
Cook on LOW for 8–9 hours.
By dinner, the beef should practically fall apart with a fork.
Serve with the vegetables and spoon some of that broth over everything.
3. Chicken Taco Bowls

Not every fall dinner has to involve cream sauce and potatoes.
This one stays in our rotation because everyone can build their own bowl.
You'll Need
2 pounds chicken breasts
1 jar mild salsa
1 can black beans, drained
1 cup frozen corn
1 packet taco seasoning
½ cup chicken broth
How to Make It
Add everything to the crockpot.
Cook on LOW for 6 hours or HIGH for 3–4 hours.
Shred the chicken directly in the slow cooker.
Build Your Bowls With
Rice.
Avocado.
Cheese.
Sour cream.
Tomatoes.
Tortilla chips.
Lime.
For the kids, I simply put each component separately on their plates.
Same dinner.
Much less suspicious-looking.
4. Creamy Tuscan Chicken

This is one of those dinners that tastes like you did much more work than you actually did.
Which is exactly my kind of recipe.
You'll Need
2 pounds chicken breasts
1 cup chicken broth
3 garlic cloves
1 teaspoon Italian seasoning
½ cup chopped sun-dried tomatoes
4 ounces cream cheese
¾ cup heavy cream
½ cup grated Parmesan
2 cups baby spinach
How to Make It
Add the chicken, broth, garlic, seasoning and sun-dried tomatoes.
Cook on LOW for 5–6 hours.
During the final 30 minutes, stir in cream cheese, cream, Parmesan and spinach.
Serve over pasta, rice or mashed potatoes.
For our family, I'd probably do pasta because I know the kids will eat it even if they decide the spinach is suddenly offensive.
5. Slow Cooker Chicken Noodle Soup

There are few dinners more comforting on a rainy fall day.
And in Washington, we have plenty of those.
You'll Need
1½ pounds chicken breasts
3 carrots, sliced
3 celery stalks, sliced
1 onion, diced
3 garlic cloves
8 cups chicken broth
1 teaspoon thyme
1 bay leaf
Salt and pepper
2 cups egg noodles
How to Make It
Add everything except the noodles.
Cook on LOW for 6–7 hours.
Remove and shred the chicken.
Return it to the slow cooker.
Add the noodles during the final 20–30 minutes and cook until tender.
Serve with crusty bread or grilled cheese.
6. BBQ Pulled Chicken

This might be the easiest recipe on this entire list.
You'll Need
2 pounds chicken breasts
1½ cups BBQ sauce
½ cup chicken broth
1 tablespoon brown sugar
1 teaspoon garlic powder
How to Make It
Put everything in the slow cooker.
Cook on LOW for approximately 6 hours.
Shred.
Done.
Serve it on brioche buns with coleslaw, alongside roasted potatoes, or even over baked sweet potatoes.
This is also perfect for football Sundays because you can leave the shredded chicken warm in the crockpot and let everyone make sandwiches when they're hungry.
7. Creamy Chicken & Wild Rice

Apparently I have a very specific fall food personality because chicken and wild rice appears in multiple forms around here.
But this version is made entirely in the slow cooker.
You'll Need
1½ pounds chicken breasts
1 cup wild rice blend
3 carrots, diced
2 celery stalks
1 onion
6 cups chicken broth
1 teaspoon thyme
½ teaspoon rosemary
Salt and pepper
1 cup half-and-half
How to Make It
Add everything except the half-and-half.
Cook on LOW for 6–7 hours, checking your particular rice blend for timing.
Shred the chicken.
Stir in the half-and-half during the final 20–30 minutes.
If you'd like it thicker, you can add a small cornstarch slurry.

8. Beef & Broccoli

This one is perfect when we're craving takeout but I already have dinner going at home.
You'll Need
1½ pounds thinly sliced beef
1 cup beef broth
½ cup low-sodium soy sauce
⅓ cup brown sugar
1 tablespoon sesame oil
3 garlic cloves
1 tablespoon grated ginger
4 cups broccoli florets
2 tablespoons cornstarch
2 tablespoons water
How to Make It
Add beef, broth, soy sauce, brown sugar, sesame oil, garlic and ginger.
Cook on LOW for 4–5 hours.
Mix cornstarch and water and stir it in.
Add broccoli during the final 30 minutes so it doesn't become mushy.
Serve over rice.
9. Salsa Verde Chicken

This is another meal I love because you can turn the leftovers into something completely different the next day.
You'll Need
2 pounds chicken breasts
16 ounces salsa verde
½ cup chicken broth
1 teaspoon cumin
½ teaspoon garlic powder
How to Make It
Add everything.
Cook on LOW for 6 hours.
Shred.
Use it for:
Tacos.
Rice bowls.
Quesadillas.
Nachos.
Salads.
Or stuffed baked potatoes.
The next day, I'll turn whatever is left into quesadillas for lunch.
10. Slow Cooker Meatballs & Marinara

There are nights when spaghetti and meatballs is exactly what everyone needs.
You'll Need
1½ pounds prepared or homemade meatballs
2 jars marinara sauce
½ cup water
1 teaspoon Italian seasoning
Parmesan for serving
How to Make It
Add everything except Parmesan to your slow cooker.
Cook on LOW for 5–6 hours.
Serve with spaghetti and Parmesan.
Add Caesar salad and garlic bread if you want to make it feel like a full Sunday dinner.
Or put the meatballs into toasted rolls with mozzarella for meatball sandwiches the next day.
What I Serve With Crockpot Dinners
The entire point of a crockpot meal is making dinner easier, so I'm not making complicated sides.
Most nights it's one of these:
Crusty bread.
Garlic bread.
Rice.
Mashed potatoes.
Simple Caesar salad.
Roasted vegetables.
Fruit for the kids.
Brioche buns.
Cornbread.
Sometimes it's literally just the crockpot dinner and bread.
That is a complete meal.
How I Serve Crockpot Meals to Toddlers
One of the easiest changes I've made is stopping myself from assuming the kids need an entirely different dinner.
Instead, I pull apart what we're eating.
Pot roast becomes:
Beef + potato + carrot + fruit.
Chicken taco bowls become:
Chicken + rice + cheese + avocado + tortilla chips.
Chicken noodle soup becomes:
Chicken + noodles + carrots + bread.
Spaghetti and meatballs becomes:
Well...
Spaghetti and meatballs.
That one usually doesn't need much convincing.
My Crockpot Grocery Staples
I like keeping enough basics around that I can usually make at least one slow cooker dinner without planning ahead.

Having a stocked freezer is probably the biggest reason these meals actually happen.
A Little Fall Meal-Prep Trick
If I know we have a busy week coming, I'll prep two crockpot meals at once.
I'll make the dinner we're having that day.
Then I'll put the ingredients for another recipe into a freezer bag.
Label it.
Freeze it flat.
Future me can pull it out, thaw it safely in the refrigerator and dump everything into the crockpot another morning.
That isn't glamorous meal prep.
But it works.
My Favorite Slow Cooker Essentials
This is where I would place the affiliate section in the article.
I'd keep it tight and genuinely useful:
6–8 quart slow cooker
Slow cooker liners
Wooden utensils
Meat thermometer
Cutting boards
Glass food-storage containers
Freezer bags
Soup bowls
Dutch oven
Toddler plates
I wouldn't add products throughout every single recipe.
I'd rather have one strong shopping section readers can actually use.
Dinner Waiting for You Is a Different Kind of Cozy
There are plenty of things I love about fall.
The clothes.
The leaves.
Pumpkin patches.
Football Sundays.
Rainy afternoons at home.
But I think one of my favorite parts is how naturally the season makes us slow down.
We come home a little earlier.
The evenings get darker.
We spend more time around the table.
And there is something especially comforting about walking into the house after being outside all afternoon and realizing dinner has already been cooking for hours.
The house smells good.
Everyone is hungry.
And instead of immediately starting dinner, I can just serve it.
Maybe that's what I'm looking for most in this season.
Not more elaborate traditions.
Just little things that make our family life feel easier and warmer.
And sometimes that looks like a crockpot sitting on the kitchen counter.
